INGREDIENTS:
- Penne pasta or elbow macaroni 150grams
- Vegetable oil 2 tbsp
- Butter 2 tbsp
- Garlic cloves 6-8 finely chopped
- All-purpose flour 1 tbsp
- Milk 2 cups (Room Temperature)
- Heavy cream 1/4th cup
- Grated cheese 1/2 cup
- Dried oregano 1 tsp
- Black pepper powder 1/2 tsp
- Red chili flakes 1/2 tsp
- Salt as required
METHOD:

Boil the pasta according to the instructions on the package. Drain and keep aside.
Heat oil and butter in a pan. Once the butter melts add the minced garlic cloves and cook for 1 minute until fragrant.
Then add in the flour. Whisk for around 30-60 seconds. Don't brown the flour.
Then add in the milk and cream. Mix everything using a whisker so that there are no lumps formed.
Add in the seasonings and cheese. Mix in everything and let the sauce simmer.
Add in the boiled pasta. Toss until the pasta is coated with the sauce. Taste and adjust the seasoning at this point.
Sprinkle smoked paprika powder on top and serve hot.
