INSTRUCTIONS:
- Basmati Rice pre-cooked 3 cups
- Ginger 1 inch grated
- Garlic 1 tsp finely chopped
- Onions 2 finely chopped
- Eggs 3
- Prawns 250 grams cleaned and deveined
- Chicken bite size pieces boneless 150 grams
- Spring onions 1/4th cup finely chopped
- Beans 1/2 cup finely chopped
- Carrots 1/2 cup thinly sliced
- Red Bell Peppers 1 sliced
- Yellow Bell Pepper 1 sliced
- Soy sauce 1 tbsp
- White/Black pepper powder 1/2 tsp
- Salt as required
- Oil 4 tbsp
METHOD:
Serving size: 4-5
Heat oil in a wok. Scramble the eggs. Set aside.
Heat oil and add chicken pieces along with salt and black pepper powder. Stir fry until cooked.
Sauté the prawns for 4-5 minutes.
Heat the remaining oil in the wok. Add ginger, onion and garlic and sauté for 30 seconds.
Add the veggies. Stir fry on high heat for another 2-3 minutes.
Add rice, chicken, prawns and scrambled eggs. Add in soy sauce, white pepper powder and salt.
Finally, add spring onions. Mix everything well and stir fry on high heat for 2-3 minutes.
Serve mixed fried rice with mushroom stir-fry and pickled onions.
