Mixed Fried Rice

INSTRUCTIONS:

  1. Basmati Rice pre-cooked 3 cups
  2. Ginger 1 inch grated
  3. Garlic 1 tsp finely chopped
  4. Onions 2 finely chopped
  5. Eggs 3
  6. Prawns 250 grams cleaned and deveined
  7. Chicken bite size pieces boneless 150 grams 
  8. Spring onions 1/4th cup finely chopped
  9. Beans 1/2 cup finely chopped
  10. Carrots 1/2 cup thinly sliced
  11. Red Bell Peppers 1 sliced
  12. Yellow Bell Pepper 1 sliced
  13. Soy sauce 1 tbsp
  14. White/Black pepper powder 1/2 tsp
  15. Salt as required
  16. Oil 4 tbsp

METHOD:

Serving size: 4-5


Heat oil in a wok. Scramble the eggs. Set aside.

Heat oil and add chicken pieces along with salt and black pepper powder. Stir fry until cooked.

Sauté the prawns for 4-5 minutes. 

Heat the remaining oil in the wok. Add ginger, onion and garlic and sauté for 30 seconds. 

Add the veggies. Stir fry on high heat for another 2-3 minutes. 

Add rice, chicken, prawns and scrambled eggs. Add in soy sauce, white pepper powder and salt. 

Finally, add spring onions. Mix everything well and stir fry on high heat for 2-3 minutes.

Serve mixed fried rice with mushroom stir-fry and pickled onions.

Creamy Grilled Chicken Breast

  INGREDIENTS: Boneless Skinless Chicken Breasts 4 pieces Butter 3tbsp Oil 1tbsp Onion 1 medium finely chopped Oregano  Garlic 1tbsp Minced Water 1 cup Cream 1 cup Salt and Pepper as per taste METHOD: Serving Size 4 Season the chicken breasts with salt and pepper. Heat a large skillet to a medium high heat. Add one tablespoon of butter and oil. Once the butter has melted add the chicken breasts. Sear for about 3-4 minutes until golden brown. Spinach And Cottage Cheese (Palak Paneer) Paratha

  INGREDIENTS: Spinach Leaves 500 gram Cottage Cheese (Paneer) 400 gram grated Onion 3 tbsp chopped Cumin Seeds 1 tsp Ginger grated 1 tsp Green Chili 2 chopped Red Chili Powder 1/2 tsp Coriander Powder 1 tsp Coriander Leaves chopped a handful Salt to taste Sugar 1/2 tsp Oil 4-5 tbsp Whole Wheat Flour 2 cups Water as needed METHOD: Serving Size: 6-7 Blanch the palak leaves by immersing them in hot water for 4-5 minutes.
